Mini Monkey Bread Muffins

Mini monkey bread muffins, mini monkey bread muffins! Say that ten times fast!  These little babies are great on the go, yummy for breakfast or dessert, and pair perfect with a nice bold cup a' joe.  I didn't have a recipe for them, or even plan on making them, but I did however have inspiration and motivation to surprise my hubby.  I didn't have a car this morning to cruise to the store so I thought to myself, self - what can I make with no eggs, no milk, and some sugar?  Then the lightbulb went off! I have one can of biscuits, tons of sugar, butter, and cinnamon! Alas, I briskly thumbed through my recipe book to find the ye old doctor monkey bread recipe but to my dismay, I didn't have enough biscuit dough! Crumb!  And then the second lightbulb went off, mini monkey bread muffins!  Okay, so it didn't go exactly pan out like that, but enjoy nonetheless!  (Did you enjoy the play on words?)


Ingredients:
  • sugar
  • cinnamon
  • butter
  • one can of pillsbury biscuits
Prepare:
  1. Measure 1/3 cup of sugar & 1/3 tablespoon cinnamon.  Combine in large ziplock bag.
  2. Pop biscuit can.  Cut each biscuit in sixths.  Add to bag.
  3. Shake shake shake shake, shake your baggie.
  4. Insert muffin/cupcake liners (I made my own out of parchment paper for a more rustic look)
  5. Add 6-8 pieces of biscuit to each crater (don't pile too many or it will rise too high in the oven)
  6. Melt 1/3 cup sugar, 1/3 stick of butter, and 1 teaspoon cinnamon in microwave - 40 seconds.
  7. Spoon over each monkey muffin until juicy and well covered.
  8. Recipe makes about 8-10 muffins depending on how big you want them.
  9. Preheat oven 350 - cook for 20-25 minutes.
  10. Stuff & enjoy.
*optional: add nuts to mix if you're feeling 
adventurous or feel the need to healthy-it up*

Summer Orzo Salad

Okay, so I cannot claim this recipe as my own, but I did make it this evening!  I am not going to try to until tomorrow, I'm going to let it 'marinate' over night and then bring it to a picnic tomorrow, so we'll see how all the guests like it.  It just looks so summery and smells so good, how could it possibly not taste the same?  I'll let you know how it goes over.


INGREDIENTS:

  • 1.5 cup Orzo (it looks like extra large rice, but it's really a form of pasta)
  • 4 cups low sodium chicken broth (I like to control the amount of salt later on)
  • 1 (15 oz.) can garbanzo beans (you can substitute with northerns or corn)
  • 1.5 cups grape tomatoes (or yellow tear drop tomatoes)
  • 3/4 red onion
  • 1/2 cup chopped fresh basil
  • 1/4 cup chopped fresh mint (I happen to have a nifty little herb garden, so this part may become expensive)
DRESSING INGREDIENTS
  • 1/2 cup red wine vinegar
  • 1 cup extra virgin olive oil (your dressing is only as good as your base, so be sure to get extra vibrant and fruity oil, no veggie oil here.)
  • 1-1.5 fresh lemon
  • 2 teaspoons honey
  • S&P
PREPARE:
  1. Pour the broth into a heavy large saucepan.
  2. Cover the pan and bring the broth to a boil over high heat. Stir in the orzo. 
  3. Cover partially and cook until the orzo is tender but still firm to the bite, stirring frequently, about 7 minutes. 
  4. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely.
  5. Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.
  6. Toss the orzo with the beans, tomatoes, onion, basil, mint, and enough vinaigrette to coat. (Dress salad just before serving).  Season the salad, to taste, with salt and pepper, and serve at room temperature.

Soup for Sara






This recipe is posted specifically for my dear friend Sara Kent, although you may enjoy it as well! Apparently my husband told her about my Panera Bread facsimile of their famous Broccoli Cheddar.  Sometimes I just can't bear to buy a cup of soup for 6 dollars, and sometimes I can't not! So I gave myself both options of either making it myself when I'm feeling like a homebody or going and getting the "real thing." Hope you enjoy it, I think it tastes strikingly similar.




INGREDIENTS
    • 4 bread bowls (sourdough)
    • 2 cans of Cambells broccoli cheddar soup
    • 1 can of Cambells cheddar soup
    • 3 ‘cans’ of whole milk (I prefer whole, makes the soup more hardy)
    • 1 12 oz. bag of broccoli, fresh or frozen (I use fresh)
DIRECTIONS:
  1. Preheat oven 275 degrees.
  2. Combine all three cans of soup into large pot, add three cans of milk.
  3. Whisk until well combined and stir continually on medium heat.
  4. Get out medium size pot, fill half way with salted water. Bring to boil.
  5. Once boiling, add all of broccoli.  Cook to liking (or when tender & bright green).
  6. Add bread bowls to oven (bottom shelf) & set timer for 15 minutes.
  7. Once broccoli is cooked, add to food processor*. (You can leave out a few florets for a garnish if so desired).  Blend to liking, I personally like it pureed.
  8. Add puree to soup and whisk again. Allow all to heat through.
  9. Salt & pepper to taste.
  10. Retrieve bread bowls, fill with soup, and garnish with broccoli floret.
  11. Serve hot & enjoy.  Keep leftover soup separate from unused bread bowls.
*if using an immersion blender instead of a food processor, add whole florets to soup, then pulsate.

Braised Beef & Rice

Monday night my dear husband cooked dinner for me.  It was FANTASTIC.  Here's how he crafted the delicious delicacy. Earlier that morning, he placed a cut of tough tough beef into our crock pot, added about 1/2 cup of water and one packet of lipton onion seasoning.  He let it cook for about 12 hours on the lowest setting.  Once evening rolled around he cooked up 2 cups of jasmine white rice according to the packages instructions.  He then topped the rice with a slice of the tender beef and poured the scrumptious auju sauce over top.  It was AMAZING.  It was tender, succulent, savory, and perfectly cooked.  Other options to spice this dish up could be adding baby red potatoes, onions, peppers etc... half way through the day, or adding a port-wine reduction to the meat to cook add another layer of flavor. This recipe is great for people on the go who don't have time to stand in front of a stove at all.  It cooks itself! Enjoy and thanks again Pete!

Breakfast for Grandma

So today I am granny-nanny-ing.  Basically, I am hanging out with my Grandma, prepping her meals, getting her meds ready, getting her exercise in.... etc.  I enjoy days like this when I get to spend time with her.  It gives me the precious memories I will remember when she's gone and let's her know I care for her.  All this to say, I made her breakfast this morning! Of course she's not at picky eater, never has been even at 92, but she relentlessly compliments the chef - which I don't mind.  Here's what I cooked up for her.

INGREDIENTS
  • 1 egg
  • 1 piece of pita bread
  • Your choice of veggies (tomato, onion, pepper, etc....)
  • 2 slices smoked ham
  • fresh fruit
  • 2 tablespoons milk
  • 1/8 cup cheese (block or grated is fine)
  • S&P
  • olive oil/coconut oil
PREPARE
  1. Crack egg open.  Add milk.  Beat well until pale yellow & well combined.
  2. Season with salt & pepper.
  3. Add choice veggies (I used one baby tomato for GB)
  4. Add cheese; grate or break up if in block form.
  5. Mix again.
  6. Turn on frying pan - medium high. Coat with olive oil or melt coconut oil.   (I use coconut oil for Grandma, it's really good for the heart.)
  7. Prep fruit - slice and plate. Today I used fresh strawberries and half a banana.
  8. Add egg mixture to pan, it will cook up fast so don't walk away.
  9. Once egg is done, heat smoked ham in microwave - 10-20 seconds. You can use breakfast ham or even lunch meat; you can also substitute bacon or sausage here.
  10. Toast pita bread.
  11. Plate ham on pita, eggs on ham.  Garnish with fresh mint (on fruit) or parsley (on eggs).
  12. ENJOY with a cup of freshly brewed coffee and a morning devotional.

Breakfast In Bed

Lately I have decided to bless my husband before he awakens in the morning.  He has been diligently following a rigorous diet of greens & proteins and not much else - so yesterday I decided to surprise him with french toast and coffee! Not sure if this makes me a good wife or a poor one, but none the less it sounded pretty good to me too.  So here's how I made the tasty little buggers.

RANDALL SCALE:

Serving Size...............5-7 slices
Prep Time..................15-20 minutes 


INGREDIENTS
  • Hardy Bread (or day old stiff bread)
  • 2 Eggs
  • Half & Half
  • Powdered Suger
  • Cinnamon Sugar
  • Butter
PREPARE
  1. Heat pan to medium-high.
  2. Once warm, add 1-2 tablespoons butter to ensure non stick removal
  3. Scramble both eggs (beat until yokes broken)
  4. Add 1/4 to 1/2 cup half & half
  5. Scramble until mixture turns to a pale yellow. Make sure yokes & whites are well beaten, otherwise you will end up with scrabbled eggs on top of your toast instead of french toast.
  6. Get your hardy bread out.  Depending on how many slices of bread will fit into your skillet, dredge this many slices at a time.  Otherwise the bread will sit too long in the custard and fall apart.
  7. Once your drench both sides with the custard, place on sizzling skillet.
  8. Allow to brown on both sides, then reduce heat to medium or medium low.
  9. Cook for 3-4 minutes on each side so that eggs are cooked.
  10. Plate & garnish with your favorite toppings; Pete's happen to be powdered sugar & syrup whereas I like a subtle blend of granulated sugar & cinnamon.  Others of you may indulge with strawberries, blueberries, chocolate chips, etc.  It is afterall custard french toast - so, live it up!
