Mini Monkey Bread Muffins

Mini monkey bread muffins, mini monkey bread muffins! Say that ten times fast!  These little babies are great on the go, yummy for breakfast or dessert, and pair perfect with a nice bold cup a' joe.  I didn't have a recipe for them, or even plan on making them, but I did however have inspiration and motivation to surprise my hubby.  I didn't have a car this morning to cruise to the store so I thought to myself, self - what can I make with no eggs, no milk, and some sugar?  Then the lightbulb went off! I have one can of biscuits, tons of sugar, butter, and cinnamon! Alas, I briskly thumbed through my recipe book to find the ye old doctor monkey bread recipe but to my dismay, I didn't have enough biscuit dough! Crumb!  And then the second lightbulb went off, mini monkey bread muffins!  Okay, so it didn't go exactly pan out like that, but enjoy nonetheless!  (Did you enjoy the play on words?)


Ingredients:
  • sugar
  • cinnamon
  • butter
  • one can of pillsbury biscuits
Prepare:
  1. Measure 1/3 cup of sugar & 1/3 tablespoon cinnamon.  Combine in large ziplock bag.
  2. Pop biscuit can.  Cut each biscuit in sixths.  Add to bag.
  3. Shake shake shake shake, shake your baggie.
  4. Insert muffin/cupcake liners (I made my own out of parchment paper for a more rustic look)
  5. Add 6-8 pieces of biscuit to each crater (don't pile too many or it will rise too high in the oven)
  6. Melt 1/3 cup sugar, 1/3 stick of butter, and 1 teaspoon cinnamon in microwave - 40 seconds.
  7. Spoon over each monkey muffin until juicy and well covered.
  8. Recipe makes about 8-10 muffins depending on how big you want them.
  9. Preheat oven 350 - cook for 20-25 minutes.
  10. Stuff & enjoy.
*optional: add nuts to mix if you're feeling 
adventurous or feel the need to healthy-it up*
